Slow Cooker Saturday!

It's that time again! Time for another yummy Slow Cooker Saturday recipe!  This week I tried a new recipe and it turned out fantastic so I would love to share it...

Slow Cooker Thai Chicken

6 Skinless Chicken Thighs
3/4 Cup Salsa
1/4 Cup Chunky Peanut Butter
1 Tbsp. Soy Sauce
2 Tbsp. Lime Juice
1 Tsp. Grated Ginger Root (optional)
1 Tbsp. Chopped Peanuts (optional)

1) Place Chicken In Slow Cooker
2) In A Bowl, Mix All Remaining Ingredients Together Except For The Peanuts
3) Pour Mixture Over Chicken
4) Cover And Cook On Low For 8 Hours 
5) After Cooking, Move To A Platter And Serve Over Cooked Rice With Chopped Peanuts Sprinkled On    Top
6) Enjoy!

* Makes 6 Servings
